With the soup I made some homeade rolls, the smell from the dough baking is such a homey feeling.
So I woke up this morning, took my sick self to the market and got what I needed for soup:
Vegetable Soup That Makes you Feel Better:
3 thin leeks, white part only. chopped
15 small mushrooms, sliced thin
1 stalk celery, sliced thin
3 small zucchinis, chopped
3 carrots, chopped
1 packet mushroom soup
olive oil
Saute leeks in the olive oil for a few minutes. Add the mushrooms and sautee till softened. Add rest of veggies and cover, stirring occasionally. Add water will covered and bring to boil. Add the mushroom soup and stir. Cook till tender, about 10-15 minutes. Add salt & pepper.
Easy rolls:
500 grams bread flour
2 1/2 tsp. yeast
1 tsp salt
1 tsp. sugar
3 Tbs. olive oil
2 cups warm water
Coarse salt, flax seeds, sunflower seeds, oats (use your imagination)
Mix all ingredients and knead for 7 minutes.
Let stand, covered, till double in size.
Divide into 6-7 pieces and roll nto rectangular rolls. Place into a bowl of warm water (this will make the rolls easier to strech). Strech the roll and dip in your toppings.
Cover rolls for 30 minutes.
Heat oven to 220C and bake for 10-13 minutes till golden.
Smothered in butter
